Chocolate Pudding Cake
Ingredients:
For the Cake:
- 1 cup all-purpose flour
- 3/4 cup granulated sugar
- 1/4 cup unsweetened cocoa powder
- 2 teaspoons baking powder
- 1/4 teaspoon salt
- 1/2 cup milk
- 1/3 cup unsalted butter, melted
- 1 1/2 teaspoons vanilla extract
For the Pudding:
- 1/2 cup granulated sugar
- 1/2 cup brown sugar, packed
- 1/4 cup unsweetened cocoa powder
- 1 1/4 cups hot water
Instructions:
- Preheat the oven to 350°F (175°C). Lightly grease a 9-inch square baking dish.
- Make the cake batter: In a medium bowl, combine the flour, 3/4 cup sugar, 1/4 cup cocoa, baking powder, and salt. Stir in milk, melted butter, and vanilla until smooth. Spread the batter evenly in the prepared baking dish.
- Prepare the pudding layer: In a small bowl, mix together the 1/2 cup granulated sugar, brown sugar, and 1/4 cup cocoa. Sprinkle this mixture over the cake batter in the dish. Pour hot water over the top; do not stir.
- Bake for 35-40 minutes, or until the center is set and the top looks crusty.
- Serve warm: Allow the cake to cool slightly before serving, ideally with a scoop of vanilla ice cream or a dollop of whipped cream.
