Classic Cheesecake
Ingredients:
For the Crust:
- 1 1/2 cups graham cracker crumbs
- 1/4 cup granulated sugar
- 1/2 cup unsalted butter, melted
For the Filling:
- 4 packages (8 ounces each) cream cheese, softened
- 1 cup granulated sugar
- 1 teaspoon vanilla extract
- 4 large eggs
- 1 cup sour cream
- 1/2 cup heavy cream
Instructions:
- Prepare the Oven and Pan:
- Preheat your oven to 325°F (163°C).
- Grease a 9×13 inch baking dish or line it with parchment paper.
- Make the Crust:
- In a medium bowl, combine the graham cracker crumbs, sugar, and melted butter.
- Press the mixture evenly into the bottom of the prepared baking dish.
- Bake the crust for 10 minutes. Remove from the oven and let it cool while you prepare the filling.
- Prepare the Filling:
- In a large mixing bowl, beat the cream cheese until smooth and creamy.
- Add the sugar and vanilla extract, and beat until well combined.
- Add the eggs, one at a time, beating well after each addition.
- Mix in the sour cream and heavy cream until the filling is smooth and well combined.
- Assemble the Cheesecake:
- Pour the filling over the baked crust, spreading it evenly with a spatula.
- Bake the Cheesecake:
- Bake in the preheated oven for 45-50 minutes, or until the center is set and the edges are lightly golden.
- Turn off the oven and let the cheesecake cool in the oven with the door slightly ajar for about 1 hour.
- Cool and Chill:
- Remove the cheesecake from the oven and let it cool to room temperature.
- Refrigerate the cheesecake for at least 4 hours, or overnight, before serving.
- Serve:
- Slice the cheesecake into squares and serve.
