Classic Cheesecake

 

Ingredients:

For the Crust:

  • 1 1/2 cups graham cracker crumbs
  • 1/4 cup granulated sugar
  • 1/2 cup unsalted butter, melted

For the Filling:

  • 4 packages (8 ounces each) cream cheese, softened
  • 1 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 4 large eggs
  • 1 cup sour cream
  • 1/2 cup heavy cream

Instructions:

  1. Prepare the Oven and Pan:
    • Preheat your oven to 325°F (163°C).
    • Grease a 9×13 inch baking dish or line it with parchment paper.
  2. Make the Crust:
    • In a medium bowl, combine the graham cracker crumbs, sugar, and melted butter.
    • Press the mixture evenly into the bottom of the prepared baking dish.
    • Bake the crust for 10 minutes. Remove from the oven and let it cool while you prepare the filling.
  3. Prepare the Filling:
    • In a large mixing bowl, beat the cream cheese until smooth and creamy.
    • Add the sugar and vanilla extract, and beat until well combined.
    • Add the eggs, one at a time, beating well after each addition.
    • Mix in the sour cream and heavy cream until the filling is smooth and well combined.
  4. Assemble the Cheesecake:
    • Pour the filling over the baked crust, spreading it evenly with a spatula.
  5. Bake the Cheesecake:
    • Bake in the preheated oven for 45-50 minutes, or until the center is set and the edges are lightly golden.
    • Turn off the oven and let the cheesecake cool in the oven with the door slightly ajar for about 1 hour.
  6. Cool and Chill:
    • Remove the cheesecake from the oven and let it cool to room temperature.
    • Refrigerate the cheesecake for at least 4 hours, or overnight, before serving.
  7. Serve:
    • Slice the cheesecake into squares and serve.
