- In a large mixing bowl, beat the softened cream cheese until smooth and creamy.
- Gradually add the granulated sugar, beating until well combined.
- Add the vanilla extract and mix until incorporated.
- Add the eggs, one at a time, beating well after each addition.
- Mix in the sour cream and heavy cream until smooth.
3. Assemble and Bake:
- Pour the cheesecake filling over the cooled crust in the springform pan.
- Place the springform pan in a large roasting pan. Fill the roasting pan with hot water to come about halfway up the sides of the springform pan to create a water bath.
- Carefully transfer the roasting pan to the preheated oven.
- Bake the cheesecake for 1 hour and 30 minutes, or until the center is just set and slightly jiggly.
- Turn off the oven and let the cheesecake cool in the oven with the door slightly open for 1 hour.
4. Chill the Cheesecake:
- Remove the cheesecake from the water bath and let it cool to room temperature.
- Once cooled, cover the cheesecake with plastic wrap and refrigerate for at least 4 hours, or overnight, to allow it to set completely.
5. Serve:
- Carefully run a knife around the edge of the springform pan before releasing the sides.
- Transfer the cheesecake to a serving platter.
- Slice and serve with your favorite toppings, such as fresh fruit, berry compote, or whipped cream.
Tips:
- Ensure all ingredients are at room temperature to avoid lumps and achieve a smooth filling.
- Avoid overmixing the batter to prevent incorporating too much air, which can cause cracks in the cheesecake.
- The water bath helps to bake the cheesecake evenly and prevents cracks on the surface.
Enjoy your classic and creamy New York-style cheesecake!
