Classic Pork and Vegetable Egg Rolls

 

Ingredients:

For the Filling:

  • Ground pork: 1/2 pound (225g)
  • Cabbage: 2 cups, finely shredded
  • Carrot: 1 large, julienned or grated
  • Green onions: 3, chopped
  • Garlic: 2 cloves, minced
  • Ginger: 1 tablespoon, minced
  • Soy sauce: 2 tablespoons
  • Sesame oil: 1 teaspoon
  • Salt and pepper: To taste

For the Wrapping:

  • Egg roll wrappers: 20-25 (found in the refrigerated section of grocery stores)
  • Egg: 1, beaten (for sealing the rolls)

For Frying:

  • Vegetable oil: For deep frying (about 2-3 cups)

  1. Cook the filling:
    • Heat a tablespoon of vegetable oil in a large pan over medium-high heat. Add the ground pork and cook until browned and fully cooked, breaking it up as it cooks.
    • Add the garlic, ginger, and green onions, and sauté for about 2 minutes until fragrant.
    • Add the shredded cabbage and carrots, and cook until the vegetables are softened, about 3-4 minutes.
    • Stir in the soy sauce, sesame oil, salt, and pepper to taste. Cook for another 2 minutes, then remove from heat and let the filling cool.
  2. Assemble the egg rolls:
    • Lay out an egg roll wrapper on a clean, flat surface, with one corner pointing towards you (like a diamond shape).
    • Place 2-3 tablespoons of the filling near the center of the wrapper.
    • Fold the bottom corner up over the filling, then fold in the side corners towards the center, and roll tightly towards the top corner.
    • Brush the top corner with a little beaten egg to seal the roll. Repeat with the remaining wrappers and filling.
  3. Fry the egg rolls:
    • Heat the vegetable oil in a deep frying pan or pot to 350°F (175°C).
    • Carefully add the egg rolls to the hot oil, a few at a time, and fry until golden brown and crispy, about 2-3 minutes per side.
    • Use a slotted spoon to remove the egg rolls from the oil and drain on a paper towel-lined plate.
  4. Serve:
    • Serve the egg rolls hot, with dipping sauces like sweet and sour sauce, soy sauce, or chili sauce.

These egg rolls are crispy on the outside with a flavorful, savory filling inside. They make a great appetizer or snack, perfect for parties or family gatherings. Enjoy!
