Classic Potato Salad
Ingredients:
- 2 pounds Yukon gold potatoes
- 1 cup mayonnaise
- 2 tablespoons yellow mustard
- 1 tablespoon apple cider vinegar
- 1 teaspoon sugar
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 cup red onion, finely diced
- 1/2 cup celery, finely diced
- 1/2 cup dill pickles, finely diced
- 4 hard-boiled eggs, chopped
- 1/4 cup fresh parsley, chopped (optional)
- 1/4 teaspoon paprika (for garnish)
Instructions:
- Prepare the Potatoes:
- Wash and peel the potatoes. Cut them into bite-sized chunks.
- Place the potatoes in a large pot and cover with cold water. Add a pinch of salt.
- Bring to a boil and cook until the potatoes are fork-tender, about 10-15 minutes.
- Drain the potatoes and let them cool slightly.
- Prepare the Dressing:
- In a large mixing bowl, whisk together the mayonnaise, yellow mustard, apple cider vinegar, sugar, salt, and black pepper until well combined.
- Assemble the Potato Salad:
- Add the cooled potatoes to the dressing.
- Gently fold in the red onion, celery, dill pickles, and chopped hard-boiled eggs.
- Mix until all ingredients are well coated with the dressing.
- Chill and Serve:
- Cover the bowl with plastic wrap and refrigerate for at least 1 hour to let the flavors meld together.
- Before serving, sprinkle with chopped fresh parsley and a pinch of paprika for garnish.
- Optional Add-ins:
- For extra flavor, consider adding chopped fresh herbs like dill or chives.
- For a bit of crunch, you can add some diced bell peppers.
