Ingredients:

  • 2 tablespoons olive oil
  • 1 onion, finely chopped
  • 3 cloves garlic, minced
  • 1 bell pepper, diced
  • 1 can (14 oz) diced tomatoes
  • 1/2 cup white wine
  • 2 cups fish or seafood stock
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon red chili flakes (optional)
  • Salt and black pepper, to taste
  • 1 pound mussels, cleaned and debearded
  • 1 pound clams, cleaned
  • Fresh parsley, chopped for garnish
  • Lemon wedges, for serving

Instructions:

  1. Prepare the Base:
    • Heat olive oil in a large pot over medium heat. Add the chopped onion and bell pepper, cooking until softened, about 5 minutes.
    • Add the minced garlic and cook for another minute until fragrant.
  2. Add Tomatoes and Seasonings:
    • Stir in the diced tomatoes, white wine, smoked paprika, red chili flakes (if using), salt, and black pepper. Let the mixture simmer for about 5 minutes to combine the flavors.
  3. Pour in Stock:
    • Add the seafood stock and bring the mixture to a simmer.
  4. Cook the Shellfish:
    • Add the cleaned mussels and clams to the pot, covering with a lid. Let them cook until the shells open, about 5 to 7 minutes. Discard any shellfish that do not open.
  5. Final Touches:
    • Check the seasoning and adjust with more salt or pepper if needed. Sprinkle with fresh chopped parsley.
  6. Serve:
    • Ladle the stew into bowls, ensuring to distribute the shellfish evenly. Serve with lemon wedges on the side for squeezing over the top.
