Classic Tomato Soup

 

 

  • Ingredients:
  • 2 tbsp olive oil,
  • 1 onion (chopped), 2 cloves garlic (minced),
  • 1 can (28 oz) whole tomatoes,
  • 1 cup vegetable broth, salt, pepper, a
  • nd a pinch of sugar.
  • Instructions:
    1. In a large pot, heat the olive oil over medium heat. Add the onion and garlic, sautéing until soft and translucent.
    2. Add the whole tomatoes with their juice and the vegetable broth. Bring to a simmer.
    3. Season with salt, pepper, and a pinch of sugar. Simmer for 20 minutes.
    4. Puree the soup in a blender or use an immersion blender for a smooth texture. Adjust seasonings to taste and keep warm.

Cheesy Onion Toasts

  • Ingredients: 4 slices of crusty bread, 1 large onion (sliced), 1 cup shredded cheese (such as mozzarella or Swiss), olive oil, salt, and pepper.
  • Instructions:
    1. Preheat your oven’s broiler.
    2. In a skillet, heat a little olive oil over medium heat. Add the sliced onion and cook until caramelized, about 10-15 minutes, stirring occasionally.
    3. Place the bread slices on a baking sheet. Divide the caramelized onions evenly on top of each slice.
    4. Top each with shredded cheese. Season with salt and pepper.
    5. Broil until the cheese is melted and bubbly, about 3-5 minutes. Watch closely to avoid burning.

Serve the hot tomato soup with a side of the cheesy onion toasts for dipping. This meal is ideal for a chilly day, offering both warmth and rich, comforting flavors.
