Classic Tomato Soup
- Ingredients:
- 2 tbsp olive oil,
- 1 onion (chopped), 2 cloves garlic (minced),
- 1 can (28 oz) whole tomatoes,
- 1 cup vegetable broth, salt, pepper, a
- nd a pinch of sugar.
- Instructions:
- In a large pot, heat the olive oil over medium heat. Add the onion and garlic, sautéing until soft and translucent.
- Add the whole tomatoes with their juice and the vegetable broth. Bring to a simmer.
- Season with salt, pepper, and a pinch of sugar. Simmer for 20 minutes.
- Puree the soup in a blender or use an immersion blender for a smooth texture. Adjust seasonings to taste and keep warm.
Cheesy Onion Toasts
- Ingredients: 4 slices of crusty bread, 1 large onion (sliced), 1 cup shredded cheese (such as mozzarella or Swiss), olive oil, salt, and pepper.
- Instructions:
- Preheat your oven’s broiler.
- In a skillet, heat a little olive oil over medium heat. Add the sliced onion and cook until caramelized, about 10-15 minutes, stirring occasionally.
- Place the bread slices on a baking sheet. Divide the caramelized onions evenly on top of each slice.
- Top each with shredded cheese. Season with salt and pepper.
- Broil until the cheese is melted and bubbly, about 3-5 minutes. Watch closely to avoid burning.
Serve the hot tomato soup with a side of the cheesy onion toasts for dipping. This meal is ideal for a chilly day, offering both warmth and rich, comforting flavors.
