Colorful Vegetable Soup
Ingredients:
- 2 tablespoons olive oil
- 1 large onion, chopped
- 2 cloves garlic, minced
- 2 medium carrots, diced
- 2 stalks celery, diced
- 1 red bell pepper, chopped
- 1 green bell pepper, chopped
- 1 cup cabbage, shredded
- 1 zucchini, diced
- 1 liter vegetable broth
- 1 can (400g) diced tomatoes
- 1 teaspoon dried basil
- 1 teaspoon dried oregano
- Salt and pepper to taste
Instructions:
- Sauté Aromatics:
- Heat the olive oil in a large pot over medium heat. Add the chopped onion and minced garlic, sautéing until the onions become translucent.
- Add Vegetables:
- Stir in the carrots, celery, and bell peppers. Cook for about 5 minutes until the vegetables start to soften.
- Add Liquids and Simmer:
- Pour in the vegetable broth and diced tomatoes. Bring the mixture to a boil.
- Season and Simmer:
- Add the shredded cabbage and zucchini. Season with dried basil, oregano, salt, and pepper. Reduce the heat and let the soup simmer for about 20 minutes, or until all vegetables are tender.
- Adjust Seasonings:
- Taste the soup and adjust the seasonings as needed.
- Serve:
- Serve the soup hot. It’s excellent with a slice of crusty bread or a sprinkle of grated Parmesan cheese on top.
