Creamy Almond Cake Recipe
Ingredients:
For the Cake Base:
- 1 cup all-purpose flour
- 1/2 cup granulated sugar
- 1/2 cup unsalted butter, chilled and cut into small pieces
- 1 large egg
- 1/2 teaspoon vanilla extract
- 1/2 teaspoon baking powder
- A pinch of salt
For the Creamy Filling:
- 2 cups milk
- 1/2 cup granulated sugar
- 3 tablespoons cornstarch
- 3 large egg yolks
- 1 teaspoon vanilla extract
- 1/2 cup heavy cream
For the Topping:
- 1/2 cup sliced almonds
- 2 tablespoons granulated sugar
- 2 tablespoons unsalted butter, melted
Instructions:
- Prepare the Cake Base:
- Preheat your oven to 350°F (175°C). Grease a springform pan.
- In a bowl, mix the flour, sugar, baking powder, and salt. Add the chilled butter and rub it in with your fingers until the mixture resembles coarse crumbs.
- Add the egg and vanilla extract. Mix until a dough forms.
- Press the dough evenly into the bottom of the prepared springform pan. Set aside.
- Prepare the Creamy Filling:
- In a saucepan, combine the milk, sugar, and cornstarch. Cook over medium heat, stirring constantly until the mixture thickens.
- In a separate bowl, whisk the egg yolks. Gradually add a small amount of the hot milk mixture to the egg yolks, whisking constantly to temper them.
- Pour the tempered egg yolks back into the saucepan with the remaining milk mixture. Cook for an additional 2-3 minutes, stirring constantly, until thickened.
- Remove from heat and stir in the vanilla extract. Let the mixture cool slightly.
- Once cooled, fold in the heavy cream.
- Assemble the Cake:
- Pour the creamy filling over the cake base in the springform pan.
- In a small bowl, mix the sliced almonds, sugar, and melted butter. Sprinkle this mixture evenly over the top of the creamy filling.
- Bake:
- Bake in the preheated oven for 30-35 minutes or until the top is golden brown and the filling is set.
- Cool and Serve:
- Allow the cake to cool completely in the pan before removing the sides of the springform pan.
- Dust with powdered sugar if desired.
- Slice and serve.
