Creamy Chicken Alfredo Lasagna Rolls

 

Ingredients:

  • 10 lasagna noodles
  • 2 cups cooked chicken, shredded
  • 2 cups ricotta cheese
  • 1 cup mozzarella cheese, shredded
  • 1 cup Parmesan cheese, grated
  • 2 cups fresh spinach, chopped
  • 2 cloves garlic, minced
  • 2 cups heavy cream
  • 1 cup chicken broth
  • 1/2 cup butter
  • 1/4 cup all-purpose flour
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • 1 cup mozzarella cheese, shredded (for topping)

Instructions:

  1. Prepare the Lasagna Noodles:
    • Cook lasagna noodles according to package instructions until al dente. Drain and lay flat on a baking sheet to prevent sticking.
  2. Prepare the Filling:
    • In a large bowl, combine the shredded chicken, ricotta cheese, 1 cup mozzarella cheese, Parmesan cheese, chopped spinach, and minced garlic. Mix well and season with salt and pepper to taste.
  3. Prepare the Alfredo Sauce:
    • In a medium saucepan, melt the butter over medium heat. Add the flour and whisk continuously for about 1 minute until it forms a roux.
    • Gradually add the heavy cream and chicken broth, whisking constantly to prevent lumps.
    • Add the Italian seasoning, and continue to cook, stirring frequently, until the sauce thickens, about 5-7 minutes.
    • Season with salt and pepper to taste.
  4. Assemble the Lasagna Rolls:
    • Preheat your oven to 375°F (190°C).
    • Spread a thin layer of Alfredo sauce on the bottom of a 9×13-inch baking dish.
    • Spread a generous amount of the chicken and cheese mixture onto each lasagna noodle. Roll up each noodle and place it seam side down in the baking dish.
  5. Bake the Lasagna Rolls:
    • Pour the remaining Alfredo sauce over the lasagna rolls, ensuring each roll is well-covered.
    • Sprinkle 1 cup of shredded mozzarella cheese on top.
    • Cover the baking dish with aluminum foil and bake for 20 minutes.
    • Remove the foil and bake for an additional 10-15 minutes, or until the cheese is bubbly and golden brown.
  6. Serve:
    • Let the lasagna rolls cool for a few minutes before serving.
    • Garnish with fresh parsley or basil if desired.
