Creamy Chicken and Mushroom Penne Pasta
Ingredients:
- 2 tablespoons olive oil
- 2 chicken breasts, sliced into strips
- Salt and pepper, to taste
- 1 teaspoon Italian seasoning
- 2 cups mushrooms, sliced
- 3 cloves garlic, minced
- 1 cup chicken broth
- 1 cup heavy cream
- 1/2 cup grated Parmesan cheese
- 8 ounces penne pasta
- Fresh parsley, chopped for garnish
Instructions:
- Prepare the Pasta:
- Cook the penne pasta according to package instructions until al dente. Drain and set aside.
- Cook the Chicken:
- Heat 1 tablespoon of olive oil in a large skillet over medium-high heat. Season the chicken strips with salt, pepper, and Italian seasoning. Cook until golden brown and cooked through, about 5-6 minutes per side. Remove from the skillet and set aside.
- Sauté the Mushrooms:
- In the same skillet, add the remaining olive oil and the sliced mushrooms. Sauté until the mushrooms are golden and have released their moisture, about 5 minutes.
- Add Garlic and Liquids:
- Stir in the minced garlic and cook for about 1 minute until fragrant. Add the chicken broth and bring to a simmer, scraping up any browned bits from the bottom of the skillet.
- Create the Sauce:
- Reduce heat to medium-low and stir in the heavy cream and grated Parmesan cheese. Cook until the sauce thickens slightly, about 3-4 minutes.
- Combine Pasta and Chicken:
- Return the cooked chicken to the skillet. Add the cooked penne pasta and toss well to coat in the creamy sauce. Cook for an additional 2-3 minutes to warm through.
- Garnish and Serve:
