Creamy Chicken and Mushroom Penne Pasta

 

Ingredients:

  • 2 tablespoons olive oil
  • 2 chicken breasts, sliced into strips
  • Salt and pepper, to taste
  • 1 teaspoon Italian seasoning
  • 2 cups mushrooms, sliced
  • 3 cloves garlic, minced
  • 1 cup chicken broth
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 8 ounces penne pasta
  • Fresh parsley, chopped for garnish

Instructions:

  1. Prepare the Pasta:
    • Cook the penne pasta according to package instructions until al dente. Drain and set aside.
  2. Cook the Chicken:
    • Heat 1 tablespoon of olive oil in a large skillet over medium-high heat. Season the chicken strips with salt, pepper, and Italian seasoning. Cook until golden brown and cooked through, about 5-6 minutes per side. Remove from the skillet and set aside.
  3. Sauté the Mushrooms:
    • In the same skillet, add the remaining olive oil and the sliced mushrooms. Sauté until the mushrooms are golden and have released their moisture, about 5 minutes.
  4. Add Garlic and Liquids:
    • Stir in the minced garlic and cook for about 1 minute until fragrant. Add the chicken broth and bring to a simmer, scraping up any browned bits from the bottom of the skillet.
  5. Create the Sauce:
    • Reduce heat to medium-low and stir in the heavy cream and grated Parmesan cheese. Cook until the sauce thickens slightly, about 3-4 minutes.
  6. Combine Pasta and Chicken:
    • Return the cooked chicken to the skillet. Add the cooked penne pasta and toss well to coat in the creamy sauce. Cook for an additional 2-3 minutes to warm through.
  7. Garnish and Serve:
    • Sprinkle with fresh parsley before serving. Enjoy your creamy chicken and mushroom penne pasta while warm!
