Creamy Garlic Chicken Pasta

Ingredient
For the Chicken:
- 2 large chicken breasts, cubed
- 1 teaspoon garlic powder
- 1 teaspoon Italian seasoning
- Salt and pepper, to taste
- 2 tablespoons olive oil
For the Pasta:
- 300g (10 oz) angel hair pasta or spaghetti
- 2 tablespoons unsalted butter
- 4 garlic cloves, minced
- 1 cup (240 ml) chicken broth
- 1 cup (240 ml) heavy cream
- 1/2 cup (120g) grated Parmesan cheese
- 1/2 cup diced tomatoes (fresh or canned)
- 1/2 teaspoon chili flakes (optional)
- Fresh parsley or basil, chopped (for garnish)

Step 1: Cook the Pasta

- Cook the pasta in salted boiling water according to package instructions. Drain and set aside.
Step 2: Sear the Chicken
- Heat olive oil in a large skillet over medium-high heat.
- Season the chicken cubes with garlic powder, Italian seasoning, salt, and pepper.
- Cook the chicken in the skillet until golden brown and fully cooked (about 6-8 minutes). Remove and set aside.
Step 3: Make the Sauce
- In the same skillet, melt butter over medium heat.
- Add minced garlic and sauté for 1 minute until fragrant.
- Stir in the chicken broth and let it simmer for 2 minutes.
- Add heavy cream and Parmesan cheese, stirring until the cheese is melted and the sauce thickens slightly.
Step 4: Combine
- Stir in the diced tomatoes and cooked chicken. Let it simmer for 2-3 minutes to blend the flavors.
- Toss in the cooked pasta and mix well to coat with the sauce.
Step 5: Serve
- Garnish with fresh parsley or basil and sprinkle with extra Parmesan cheese.
- Serve hot with garlic bread or a fresh side salad.
Tips:
- Add spinach or mushrooms for extra veggies.
- Use grilled shrimp instead of chicken for a seafood twist.
- For a spicier dish, increase the chili flakes or add a dash of hot sauce.
