Creamy Garlic Chicken Pasta

 

 

 

Serves: 4-6 | Prep Time: 15 minutes | Cook Time: 20 minutes

Ingredient

For the Chicken:

  • 2 large chicken breasts, cubed
  • 1 teaspoon garlic powder
  • 1 teaspoon Italian seasoning
  • Salt and pepper, to taste
  • 2 tablespoons olive oil

For the Pasta:

  • 300g (10 oz) angel hair pasta or spaghetti
  • 2 tablespoons unsalted butter
  • 4 garlic cloves, minced
  • 1 cup (240 ml) chicken broth
  • 1 cup (240 ml) heavy cream
  • 1/2 cup (120g) grated Parmesan cheese
  • 1/2 cup diced tomatoes (fresh or canned)
  • 1/2 teaspoon chili flakes (optional)
  • Fresh parsley or basil, chopped (for garnish)

Instructions

Step 1: Cook the Pasta

  1. Cook the pasta in salted boiling water according to package instructions. Drain and set aside.

Step 2: Sear the Chicken

  1. Heat olive oil in a large skillet over medium-high heat.
  2. Season the chicken cubes with garlic powder, Italian seasoning, salt, and pepper.
  3. Cook the chicken in the skillet until golden brown and fully cooked (about 6-8 minutes). Remove and set aside.

Step 3: Make the Sauce

  1. In the same skillet, melt butter over medium heat.
  2. Add minced garlic and sauté for 1 minute until fragrant.
  3. Stir in the chicken broth and let it simmer for 2 minutes.
  4. Add heavy cream and Parmesan cheese, stirring until the cheese is melted and the sauce thickens slightly.

Step 4: Combine

  1. Stir in the diced tomatoes and cooked chicken. Let it simmer for 2-3 minutes to blend the flavors.
  2. Toss in the cooked pasta and mix well to coat with the sauce.

Step 5: Serve

  1. Garnish with fresh parsley or basil and sprinkle with extra Parmesan cheese.
  2. Serve hot with garlic bread or a fresh side salad.

Tips:

  • Add spinach or mushrooms for extra veggies.
  • Use grilled shrimp instead of chicken for a seafood twist.
  • For a spicier dish, increase the chili flakes or add a dash of hot sauce.
