Creamy Mushroom and Bell Pepper Chicken Bake
Ingredients:
- Chicken pieces (legs, thighs, or breasts)
- Salt and pepper to taste
- Olive oil
- 1 onion, chopped
- 2 cloves of garlic, minced
- 1 cup of mushrooms, sliced
- 1 bell pepper, sliced
- 1 cup of heavy cream
- 1/2 cup chicken broth
- 1 teaspoon of dried herbs (thyme, rosemary, or Italian seasoning)
- 1/2 cup grated Parmesan cheese
Instructions:
- Preheat Oven: Preheat your oven to 375°F (190°C).
- Season Chicken: Season the chicken pieces with salt and pepper.
- Brown the Chicken: Heat olive oil in a large skillet over medium-high heat. Add the chicken and sear until golden brown on all sides, about 2-3 minutes per side. Remove the chicken and set aside.
- Sauté Vegetables: In the same skillet, add a bit more oil if needed, then add the onion and garlic. Sauté until the onions are translucent. Add the mushrooms and bell pepper and cook until they are just soft.
- Make the Sauce: Pour in the heavy cream and chicken broth. Bring to a simmer, then stir in the dried herbs and half of the Parmesan cheese. Season with salt and pepper to taste.
- Bake: Return the chicken to the skillet (or transfer everything to a baking dish). Sprinkle the remaining Parmesan cheese over the top. Bake in the preheated oven for about 25-30 minutes, or until the chicken is cooked through and the sauce is bubbly.
- Serve: Let it rest for a few minutes before serving. This dish goes well with rice, pasta, or a simple green salad.
