Creamy Mushroom and Bell Pepper Chicken Bake

 

Ingredients:

  • Chicken pieces (legs, thighs, or breasts)
  • Salt and pepper to taste
  • Olive oil
  • 1 onion, chopped
  • 2 cloves of garlic, minced
  • 1 cup of mushrooms, sliced
  • 1 bell pepper, sliced
  • 1 cup of heavy cream
  • 1/2 cup chicken broth
  • 1 teaspoon of dried herbs (thyme, rosemary, or Italian seasoning)
  • 1/2 cup grated Parmesan cheese

Instructions:

  1. Preheat Oven: Preheat your oven to 375°F (190°C).
  2. Season Chicken: Season the chicken pieces with salt and pepper.
  3. Brown the Chicken: Heat olive oil in a large skillet over medium-high heat. Add the chicken and sear until golden brown on all sides, about 2-3 minutes per side. Remove the chicken and set aside.
  4. Sauté Vegetables: In the same skillet, add a bit more oil if needed, then add the onion and garlic. Sauté until the onions are translucent. Add the mushrooms and bell pepper and cook until they are just soft.
  5. Make the Sauce: Pour in the heavy cream and chicken broth. Bring to a simmer, then stir in the dried herbs and half of the Parmesan cheese. Season with salt and pepper to taste.
  6. Bake: Return the chicken to the skillet (or transfer everything to a baking dish). Sprinkle the remaining Parmesan cheese over the top. Bake in the preheated oven for about 25-30 minutes, or until the chicken is cooked through and the sauce is bubbly.
  7. Serve: Let it rest for a few minutes before serving. This dish goes well with rice, pasta, or a simple green salad.
