Creamy Potato Salad with Sausages

 

 

Ingredients:

For the Potato Salad:
  • 4-5 medium potatoes (peeled and cubed)
  • 2-3 pickles (diced)
  • 1/2 cup mayonnaise
  • 1/4 cup sour cream (optional, for extra creaminess)
  • 1 teaspoon mustard (Dijon or yellow)
  • 1/2 small onion (finely diced)
  • 1 hard-boiled egg (chopped, optional)
  • Salt and pepper to taste
  • Fresh parsley (optional, for garnish)
For the Sausages:
  • 4-6 sausages (Frankfurters, bratwurst, or any preferred type)
  • Water for boiling or oil for grilling

Instructions:

  1. Cook the potatoes:
    • Place the cubed potatoes in a pot of salted water.
    • Bring to a boil and cook for 10-12 minutes, or until tender but not mushy.
    • Drain and let the potatoes cool completely.
  2. Prepare the potato salad:
    • In a large bowl, mix the mayonnaise, sour cream, mustard, salt, and pepper.
    • Add the cooled potatoes, diced pickles, onion, and chopped egg (if using).
    • Mix gently to combine, ensuring the potatoes are well coated in the dressing.
    • Cover and refrigerate for at least 30 minutes to allow the flavors to meld.
  3. Cook the sausages:
    • If boiling, bring a pot of water to a simmer (not boiling), then add the sausages and cook for 5-7 minutes.
    • If grilling, lightly oil the sausages and cook on a medium grill, turning frequently, until browned and heated through.
  4. Assemble and serve:
    • Serve the creamy potato salad alongside the warm sausages.
    • Garnish the potato salad with fresh parsley if desired
