Creamy Salmon and Shrimp Pasta
Ingredients:
- 2 salmon fillets (about 6 ounces each)
- 1/2 pound large shrimp, peeled and deveined
- 8 ounces fettuccine or your favorite pasta
- 2 tablespoons olive oil
- 2 tablespoons unsalted butter
- 3 cloves garlic, minced
- 1 cup heavy cream
- 1/2 cup grated Parmesan cheese
- 1/4 cup chicken or vegetable broth
- 1 teaspoon lemon zest
- 2 tablespoons fresh lemon juice
- 1 teaspoon dried Italian seasoning
- Salt and pepper to taste
- Fresh parsley, chopped for garnish
Instructions:
1. Cook the Pasta:
- Bring a large pot of salted water to a boil. Add the fettuccine and cook according to the package instructions until al dente. Drain and set aside.
2. Cook the Salmon:
- Season the salmon fillets with salt, pepper, and a sprinkle of Italian seasoning.
- In a large skillet, heat 1 tablespoon of olive oil over medium-high heat.
- Add the salmon fillets, skin side down, and cook for about 4-5 minutes per side, or until the salmon is cooked through and flakes easily with a fork. Remove the salmon from the skillet and set aside.
3. Cook the Shrimp:
- In the same skillet, add another tablespoon of olive oil and the butter. Once the butter has melted, add the minced garlic and cook until fragrant, about 1 minute.
- Add the shrimp to the skillet and season with salt, pepper, and a pinch of Italian seasoning. Cook the shrimp for about 2-3 minutes per side, or until they are pink and opaque. Remove the shrimp from the skillet and set aside.
4. Make the Creamy Sauce:
- In the same skillet, add the chicken or vegetable broth and bring to a simmer, scraping up any browned bits from the bottom of the skillet.
- Reduce the heat to medium-low and stir in the heavy cream, lemon zest, lemon juice, and Parmesan cheese. Cook, stirring frequently, until the sauce thickens, about 5 minutes. Season with salt and pepper to taste.
5. Combine and Serve:
- Add the cooked pasta to the skillet and toss to coat in the creamy sauce.
- Plate the pasta and top with the cooked salmon fillets and shrimp.
- Garnish with freshly chopped parsley and additional Parmesan cheese if desired.
Tips:
- For a richer flavor, you can add a splash of white wine to the skillet after cooking the shrimp and before adding the broth.
- If the sauce becomes too thick, you can thin it out with a little more broth or pasta water.
- This dish pairs well with a fresh green salad and a glass of crisp white wine.
