Creamy Sausage and Chickpea Soup

 

 

 

Ingredients:

  • 1 tablespoon olive oil
  • 300g (10 oz) sausage, sliced (Italian sausage or smoked sausage works well)
  • 1 medium onion, finely chopped
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano or Italian seasoning
  • 1/2 teaspoon chili flakes (optional, for a bit of heat)
  • 2 cups cooked or canned chickpeas, drained and rinsed
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 1 tablespoon fresh basil or parsley, chopped (for garnish)
  • Salt and pepper to taste
  • Optional: crusty bread for serving

Instructions:

  1. Cook the Sausage:
    • Heat olive oil in a large pot over medium heat.
    • Add sliced sausage and cook until browned. Remove and set aside.
  2. Sauté Aromatics:
    • In the same pot, sauté onion until translucent (about 3–4 minutes).
    • Add garlic, oregano, and chili flakes (if using). Cook for another minute.
  3. Add Chickpeas and Broth:
    • Stir in chickpeas and pour in the chicken broth.
    • Bring the mixture to a boil, then reduce heat and simmer for 10 minutes.
  4. Make It Creamy:
    • Stir in the heavy cream and Parmesan cheese. Simmer gently for 5 minutes, allowing the flavors to combine.
  5. Combine and Garnish:
    • Add the cooked sausage back to the pot.
    • Taste and adjust seasoning with salt and pepper.
    • Serve hot, garnished with fresh basil or parsley.
  6. Serve:
    • Pair with crusty bread or toasted baguettes for a complete, cozy meal.
