Creamy Sausage and Chickpea Soup
Ingredients:
- 1 tablespoon olive oil
- 300g (10 oz) sausage, sliced (Italian sausage or smoked sausage works well)
- 1 medium onion, finely chopped
- 2 cloves garlic, minced
- 1 teaspoon dried oregano or Italian seasoning
- 1/2 teaspoon chili flakes (optional, for a bit of heat)
- 2 cups cooked or canned chickpeas, drained and rinsed
- 4 cups chicken broth
- 1 cup heavy cream
- 1/2 cup grated Parmesan cheese
- 1 tablespoon fresh basil or parsley, chopped (for garnish)
- Salt and pepper to taste
- Optional: crusty bread for serving
Instructions:
- Cook the Sausage:
- Heat olive oil in a large pot over medium heat.
- Add sliced sausage and cook until browned. Remove and set aside.
- Sauté Aromatics:
- In the same pot, sauté onion until translucent (about 3–4 minutes).
- Add garlic, oregano, and chili flakes (if using). Cook for another minute.
- Add Chickpeas and Broth:
- Stir in chickpeas and pour in the chicken broth.
- Bring the mixture to a boil, then reduce heat and simmer for 10 minutes.
- Make It Creamy:
- Stir in the heavy cream and Parmesan cheese. Simmer gently for 5 minutes, allowing the flavors to combine.
- Combine and Garnish:
- Add the cooked sausage back to the pot.
- Taste and adjust seasoning with salt and pepper.
- Serve hot, garnished with fresh basil or parsley.
- Serve:
- Pair with crusty bread or toasted baguettes for a complete, cozy meal.
