Creamy Sausage and Spinach Soup Recipe
Ingredients:
- 1 pound Italian sausage (mild or spicy)
- 1 tablespoon olive oil
- 1 medium onion (diced)
- 3 garlic cloves (minced)
- 1 teaspoon red pepper flakes (optional for spice)
- 4 cups chicken broth
- 1 cup heavy cream
- 1 can (14 oz) diced tomatoes
- 2 cups fresh spinach (chopped)
- 1 teaspoon Italian seasoning
- 1/2 cup grated Parmesan cheese
- 1 cup shredded mozzarella cheese
- Salt and pepper to taste
Instructions:
- Cook the Sausage:
- Heat olive oil in a large pot over medium heat.
- Add the sausage and cook until browned, breaking it into small pieces with a spoon.
- Remove the cooked sausage and set aside.
- Sauté the Aromatics:
- In the same pot, add diced onion and cook until soft and translucent (about 3-4 minutes).
- Stir in minced garlic and red pepper flakes, cooking for 1 minute until fragrant.
- Simmer the Soup:
- Add chicken broth, diced tomatoes (with their juice), and Italian seasoning to the pot.
- Bring the mixture to a simmer, then lower the heat and let it cook for 10 minutes.
- Add Cream and Spinach:
- Stir in the heavy cream and chopped spinach.
- Cook for 5 minutes until the spinach wilts.
- Combine and Season:
- Return the cooked sausage to the pot and stir to combine.
- Season the soup with salt and pepper to taste.
- Add the Cheese:
- Sprinkle grated Parmesan cheese into the soup and stir until melted.
- Ladle the soup into bowls and top each serving with shredded mozzarella cheese.
- Optionally, place the bowls under a broiler for a few minutes to melt and brown the cheese slightly.
