Creamy Tortellini Soup with Sausage and Vegetables
Ingredients:

- 1 lb Italian sausage (sliced into rounds)
- 2 cups tortellini (cheese or your choice)
- 2 cups fresh spinach
- 1 cup diced sweet potatoes (or butternut squash)
- 4 cups chicken broth
- 1 cup heavy cream
- 2 garlic cloves (minced)
- 1 teaspoon dried basil
- 1 teaspoon dried oregano
- 1/2 teaspoon chili flakes (optional, for heat)
- Salt and pepper to taste
- 2 tablespoons olive oil
- Parmesan cheese (for garnish)
Instructions:
- Cook the Sausage: Heat olive oil in a large pot over medium heat. Add the sliced sausage and cook until browned on both sides. Remove and set aside.
- Cook Vegetables: In the same pot, add the diced sweet potatoes. Cook for 5-7 minutes until they begin to soften. Add garlic and sauté for another minute.
- Add Liquids: Pour in the chicken broth and bring to a boil. Reduce the heat and simmer until the sweet potatoes are tender, about 10 minutes.
- Cook Tortellini: Add the tortellini to the pot and cook according to the package instructions (typically 3-5 minutes).
- Make it Creamy: Stir in the heavy cream, spinach, dried basil, oregano, and chili flakes. Let simmer for 2-3 minutes until the spinach wilts and the soup thickens slightly.
- Combine and Serve: Return the cooked sausage to the pot. Stir everything together and adjust seasoning with salt and pepper.
- Garnish and Enjoy: Ladle into bowls and garnish with grated Parmesan cheese. Serve hot with crusty bread.
