Creamy Tortellini Soup with Sausage and Vegetables

 

 

 

 

Ingredients:

  • 1 lb Italian sausage (sliced into rounds)
  • 2 cups tortellini (cheese or your choice)
  • 2 cups fresh spinach
  • 1 cup diced sweet potatoes (or butternut squash)
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 2 garlic cloves (minced)
  • 1 teaspoon dried basil
  • 1 teaspoon dried oregano
  • 1/2 teaspoon chili flakes (optional, for heat)
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • Parmesan cheese (for garnish)

Instructions:

  1. Cook the Sausage: Heat olive oil in a large pot over medium heat. Add the sliced sausage and cook until browned on both sides. Remove and set aside.
  2. Cook Vegetables: In the same pot, add the diced sweet potatoes. Cook for 5-7 minutes until they begin to soften. Add garlic and sauté for another minute.
  3. Add Liquids: Pour in the chicken broth and bring to a boil. Reduce the heat and simmer until the sweet potatoes are tender, about 10 minutes.
  4. Cook Tortellini: Add the tortellini to the pot and cook according to the package instructions (typically 3-5 minutes).
  5. Make it Creamy: Stir in the heavy cream, spinach, dried basil, oregano, and chili flakes. Let simmer for 2-3 minutes until the spinach wilts and the soup thickens slightly.
  6. Combine and Serve: Return the cooked sausage to the pot. Stir everything together and adjust seasoning with salt and pepper.
  7. Garnish and Enjoy: Ladle into bowls and garnish with grated Parmesan cheese. Serve hot with crusty bread.
