Creamy Vegetable Salad
Ingredients:
- 1 large cucumber, chopped
- 2 medium tomatoes, chopped
- 1 red onion, thinly sliced
- 1 bell pepper, chopped
- 1 cup corn kernels (fresh, frozen, or canned)
- 1 cup mayonnaise
- 1/2 cup sour cream
- 1 tablespoon lemon juice
- Salt and pepper to taste
- Fresh herbs for garnish (optional)
Instructions:
- Prepare the Vegetables:
- Chop the cucumber, tomatoes, bell pepper, and red onion into bite-sized pieces.
- If using canned corn, drain and rinse it.
- Mix the Dressing:
- In a large bowl, combine the mayonnaise, sour cream, and lemon juice. Mix well until smooth.
- Season with salt and pepper to taste.
- Combine Ingredients:
- Add the chopped vegetables and corn to the dressing.
- Gently toss the ingredients until the vegetables are well-coated with the creamy dressing.
- Chill and Serve:
- Refrigerate the salad for at least 30 minutes before serving to allow the flavors to meld together.
- Garnish with fresh herbs if desired before serving.
