Creamy Wild Rice and Mushroom Soup Recipe

 

 

 

Ingredients:

  • 1 cup wild rice (uncooked, or 3 cups cooked wild rice)
  • 2 tbsp olive oil or butter
  • 1 medium onion, finely chopped
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 2 garlic cloves, minced
  • 2 cups mushrooms, sliced (white, cremini, or shiitake)
  • 4 cups vegetable or chicken broth
  • 1 cup heavy cream (or coconut cream for a dairy-free version)
  • 1 cup milk (or non-dairy milk alternative)
  • 2 tbsp all-purpose flour (optional, for thickening)
  • 1 tsp dried thyme
  • 1 tsp garlic powder
  • 1/2 tsp dried rosemary (optional)
  • Salt and pepper, to taste
  • 1 tbsp fresh parsley, chopped (plus extra for garnish)

Instructions:

  1. Cook Wild Rice:
    • Cook the wild rice according to package instructions. Set it aside. If using pre-cooked rice, ensure it’s warmed before adding to the soup.
  2. Sauté Vegetables:
    • Heat olive oil or butter in a large soup pot over medium heat.
    • Add the onion, carrots, celery, and garlic. Sauté for 5–7 minutes, or until the vegetables are soft.
  3. Add Mushrooms:
    • Stir in the mushrooms and cook for another 5 minutes until tender and slightly browned.
  4. Create the Base:
    • Sprinkle the flour over the vegetables and stir well. Cook for 1–2 minutes, allowing the flour to coat the vegetables and eliminate its raw flavor.
  5. Add Broth and Seasonings:
    • Gradually pour in the broth while stirring to avoid lumps.
    • Add thyme, garlic powder, rosemary (if using), salt, and pepper.
    • Bring to a gentle simmer.
  6. Incorporate Cream and Milk:
    • Reduce the heat to low. Stir in the heavy cream and milk. Let the soup simmer for 10 minutes, stirring occasionally to avoid scorching.
  7. Add Cooked Wild Rice:
    • Stir in the cooked wild rice and let the soup heat through for an additional 5 minutes. Adjust the thickness by adding more broth or milk if needed.
  8. Garnish and Serve:
    • Remove the soup from heat. Taste and adjust seasoning if necessary.
    • Ladle into bowls and garnish with fresh parsley.

Optional Variations:

  • Protein Additions: Add shredded chicken or turkey for a heartier soup.
  • Vegan Option: Use coconut cream and vegetable broth, and skip the flour or use a gluten-free thickener.
  • Herbs & Spices: Customize with fresh thyme, dill, or even a pinch of nutmeg for extra warmth.
