Crispy Cheesy Stuffed Pockets

 

 

Ingredients:

  • 6 small tortillas or thin slices of bread (trimmed into circles if needed)
  • 2 medium potatoes (boiled and mashed) or 1 cup cooked ground meat
  • 1/2 cup grated cheese (mozzarella, cheddar, or your choice)
  • 1/4 cup cream cheese or sour cream
  • 1 teaspoon paprika
  • 1/2 teaspoon garlic powder
  • Salt and pepper to taste
  • 2 tablespoons butter (melted)
  • Additional cheese for topping
  • Fresh parsley (chopped, for garnish)

Instructions:

  1. Prepare the filling:
    • If using potatoes, mash the boiled potatoes and mix them with cream cheese or sour cream, paprika, garlic powder, salt, and pepper.
    • If using meat, mix cooked ground meat with spices and a little cheese for a creamy filling.
  2. Assemble the pockets:
    • Take a tortilla or slice of bread and place 1-2 tablespoons of the filling on one side.
    • Fold it in half to form a semi-circle and press the edges gently to seal.
  3. Add cheese topping:
    • Place the stuffed pockets on a baking sheet lined with parchment paper.
    • Brush the tops lightly with melted butter and sprinkle grated cheese over them.
  4. Bake or fry:
    • Bake: Preheat the oven to 375°F (190°C). Bake the pockets for 10-12 minutes or until crispy and golden.
    • Fry: Heat a pan with a little oil and fry each pocket on both sides until golden and crispy.
  5. Garnish and serve:
    • Sprinkle chopped parsley over the pockets and serve them warm with your favorite dipping sauce, such as sour cream, marinara, or spicy mayo.
