Crispy Potato Pancakes Recipe

 

 

 

Ingredients:

  • 4 large potatoes
  • 1 small onion
  • 2 eggs, beaten
  • 1/4 cup all-purpose flour
  • 1 teaspoon salt
  • 1/4 teaspoon black pepper
  • Oil for frying (vegetable or canola oil)

Instructions:

  1. Prepare the Potatoes and Onion:
    • Peel the potatoes and onion.
    • Grate them using a box grater or a food processor.
    • Place the grated mixture into a clean kitchen towel or cheesecloth and squeeze out as much liquid as possible. This step is crucial for crispiness.
  2. Make the Batter:
    • Transfer the grated and drained mixture to a bowl.
    • Add the beaten eggs, flour, salt, and pepper. Mix well until the ingredients are combined.
  3. Heat the Oil:
    • Heat about 1/4 inch of oil in a large skillet over medium-high heat. The oil should be hot but not smoking.
  4. Fry the Pancakes:
    • Scoop about 2 tablespoons of the potato mixture into the skillet and flatten it slightly with the back of the spoon to form a pancake.
    • Fry each side for 3-4 minutes or until golden brown and crispy.
    • Remove and place on a plate lined with paper towels to drain excess oil.
  5. Serve:
    • Serve hot with sour cream, applesauce, or your favorite dip.
