Crispy Potato Pancakes Recipe
Ingredients:
- 4 large potatoes
- 1 small onion
- 2 eggs, beaten
- 1/4 cup all-purpose flour
- 1 teaspoon salt
- 1/4 teaspoon black pepper
- Oil for frying (vegetable or canola oil)
Instructions:
- Prepare the Potatoes and Onion:
- Peel the potatoes and onion.
- Grate them using a box grater or a food processor.
- Place the grated mixture into a clean kitchen towel or cheesecloth and squeeze out as much liquid as possible. This step is crucial for crispiness.
- Make the Batter:
- Transfer the grated and drained mixture to a bowl.
- Add the beaten eggs, flour, salt, and pepper. Mix well until the ingredients are combined.
- Heat the Oil:
- Heat about 1/4 inch of oil in a large skillet over medium-high heat. The oil should be hot but not smoking.
- Fry the Pancakes:
- Scoop about 2 tablespoons of the potato mixture into the skillet and flatten it slightly with the back of the spoon to form a pancake.
- Fry each side for 3-4 minutes or until golden brown and crispy.
- Remove and place on a plate lined with paper towels to drain excess oil.
- Serve:
- Serve hot with sour cream, applesauce, or your favorite dip.
