Ingredients:
- For the dough:
- 3/4 cup warm milk (about 110°F)
- 2 1/4 teaspoons active dry yeast
- 1/4 cup granulated sugar
- 1 egg plus 1 egg yolk, at room temperature
- 1/4 cup unsalted butter, melted
- 3 cups bread flour
- 3/4 teaspoon salt
- For the filling:
- 2/3 cup brown sugar
- 1 1/2 tablespoons ground cinnamon
- 1/4 cup unsalted butter, softened
- For the topping:
- 1 cup packed brown sugar
- 1/2 cup unsalted butter
- 1/4 cup honey
- 1 cup pecans, chopped
Instructions:
- Prepare the dough:
- Dissolve the yeast in the warm milk with a pinch of sugar. Let it sit until foamy, about 5-10 minutes.
- In a large bowl, combine the flour, sugar, and salt. Add the yeast mixture, melted butter, egg, and egg yolk. Mix until the dough comes together.
- Knead the dough on a lightly floured surface until smooth and elastic, about 8-10 minutes.
- Place the dough in a greased bowl, cover, and let it rise in a warm place until doubled in size, about 1 to 1.5 hours.
- Prepare the topping:
- In a small saucepan, melt the butter with brown sugar and honey over medium heat. Stir until the sugar is dissolved.
- Pour the mixture into the bottom of a greased baking pan, and sprinkle evenly with chopped pecans.
- Prepare the filling:
- Mix the brown sugar and cinnamon in a bowl.
- Roll out the dough into a rectangle, spread the softened butter over the dough, and sprinkle evenly with the sugar-cinnamon mixture.
- Assemble the buns:
- Roll up the dough tightly from one long end to the other and slice into 12 equal pieces.
- Place the pieces in the prepared baking pan with the pecan topping.
- Cover and let them rise again for about 30 minutes.
- Bake:
- Preheat the oven to 350°F (175°C).
- Bake the buns for 25-30 minutes, or until golden brown.
- Allow to cool slightly in the pan, then invert onto a serving plate so that the pecans are on top.
