Ingredients:

  • 1 1/2 cups almond flour
  • 1/2 cup unsweetened cocoa powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 3 large eggs
  • 1/3 cup unsweetened applesauce
  • 1/4 cup coconut oil, melted
  • 1/2 cup erythritol (or another granular sugar substitute)
  • 1 teaspoon vanilla extract
  • 1/4 cup unsweetened almond milk
  • 1/4 cup chopped nuts (like pistachios or walnuts)
  • Sugar-free chocolate chips or chunks

For the Chocolate Glaze:

  • 1/4 cup sugar-free dark chocolate
  • 1 tablespoon coconut oil

Instructions:

Muffins:
  1. Preheat your oven to 350°F (175°C) and prepare a muffin tin with liners or a light greasing.
  2. In a large bowl, mix together the almond flour, cocoa powder, baking soda, and salt.
  3. In another bowl, whisk together the eggs, applesauce, melted coconut oil, erythritol, and vanilla extract.
  4. Combine the wet and dry ingredients and stir until just mixed. Gradually add the almond milk to achieve a smooth batter.
  5. Fold in the chopped nuts and chocolate chips.
  6. Divide the batter among the muffin cups, filling each about 3/4 full.
  7. Bake for 20-25 minutes or until a toothpick inserted in the center comes out clean.
  8. Let the muffins cool in the pan for 10 minutes before removing to a wire rack to cool completely.
Chocolate Glaze:
  1. Melt the sugar-free dark chocolate with coconut oil in the microwave or over a double boiler until smooth and glossy.
  2. Drizzle the glaze over the cooled muffins and sprinkle with additional chopped nuts.
