Egg and Avocado Wraps
Ingredients:
- 4 large eggs
- 2 ripe avocados
- 2 tablespoons mayonnaise
- 1 tablespoon lemon juice
- Salt and pepper to taste
- 4 large tortillas
- Lettuce leaves (optional)
- Paprika (optional, for garnish)
Instructions:
- Boil the Eggs:
- Place the eggs in a pot of water and bring to a boil. Once boiling, reduce heat and simmer for 10 minutes.
- Remove from heat, drain, and place eggs in ice water to cool. Peel and set aside.
- Prepare the Avocado Mix:
- Scoop out the flesh of the avocados into a bowl.
- Add mayonnaise, lemon juice, salt, and pepper. Mash until smooth and creamy.
- Assemble the Wraps:
- Lay a tortilla flat and spread a generous amount of the avocado mixture over it.
- Place a whole boiled egg in the center and roll the tortilla around it, tucking in the sides as you go.
- Repeat for the remaining tortillas and eggs.
- Garnish and Serve:
- Slice each wrap into halves or thirds for easier handling.
- Sprinkle with a little paprika for added flavor and color, if desired.
- Serve on a bed of lettuce for a fresh touch.
