Egg Roll in a Bowl

 

Ingredients:

  • 1 lb ground pork (or ground chicken/turkey/beef)
  • 1 small onion, diced
  • 3 cloves garlic, minced
  • 1 small green cabbage, thinly sliced
  • 2 large carrots, julienned or grated
  • 1/4 cup soy sauce (or tamari for gluten-free)
  • 1 tablespoon sesame oil
  • 1 tablespoon rice vinegar
  • 1 teaspoon ground ginger
  • 1/2 teaspoon crushed red pepper flakes (optional, for heat)
  • 2-3 green onions, sliced
  • Sesame seeds (for garnish)
  • Salt and pepper, to taste

Instructions:

  1. Cook the Ground Meat:
    • In a large skillet or wok, cook the ground pork over medium-high heat until it’s browned and cooked through. Break it apart as it cooks. Once done, remove any excess grease if necessary.
  2. Add Aromatics:
    • Add the diced onion and minced garlic to the skillet. Cook until the onion is translucent and the garlic is fragrant, about 2-3 minutes.
  3. Add Vegetables:
    • Stir in the sliced cabbage and carrots. Cook until the cabbage is tender, about 5-7 minutes, stirring occasionally.
  4. Season the Dish:
    • In a small bowl, mix together the soy sauce, sesame oil, rice vinegar, ground ginger, and crushed red pepper flakes. Pour this mixture over the meat and vegetables. Stir well to combine and cook for an additional 2-3 minutes to let the flavors meld together.
  5. Finish and Serve:
    • Taste and season with salt and pepper if needed. Stir in the sliced green onions. Garnish with sesame seeds before serving.
  6. Enjoy:
