  • 500 grams of shrimp, peeled and deveined
  • Shells from the shrimp

  • 1 red bell pepper, diced

  • 3 tablespoons tomato paste
  • 4 cups seafood or chicken broth
  • 1 cup heavy cream
  • 2 tablespoons brandy (optional)
  • 1 teaspoon paprika
  • Fresh herbs (such as parsley or dill), chopped, for garnish
  • Salt and pepper, to taste
  • Olive oil

Directions

  1. Prepare the Shrimp Shells:
    • In a large pot, heat a splash of olive oil over medium heat. Add the shrimp shells and cook, stirring frequently, until they turn pink and are slightly toasted. This will form the base of your bisque’s flavor.
  2. Sauté Vegetables:
    • Add the onion, red bell pepper, and garlic to the pot with the shells, cooking until the vegetables are soft.
