“Fluffy Homemade Sponge Cake Recipe
Ingredients:
- 4 large eggs (room temperature)
- 1 cup (200g) granulated sugar
- 1 cup (120g) all-purpose flour
- 1/2 tsp baking powder
- 1/4 cup (60ml) milk (optional, for extra moisture)
- 1 tsp vanilla extract (optional)
Instructions:
- Prepare the Oven and Pan:
- Preheat your oven to 350°F (175°C).
- Grease an 8-inch (20cm) round cake pan and line the bottom with parchment paper.
- Whisk the Eggs:
- In a large bowl, beat the eggs with an electric mixer on high speed for about 5 minutes until thick, pale, and frothy.
- Add Sugar Gradually:
- Slowly add the sugar while continuing to beat. Mix until fully dissolved and the mixture becomes fluffy.
- Sift the Dry Ingredients:
- In a separate bowl, sift together the flour and baking powder. Gently fold this mixture into the egg-sugar batter using a spatula. Be careful not to deflate the batter.
- Add Milk and Vanilla (Optional):
- If desired, warm the milk slightly and mix it with vanilla extract. Gently fold this into the batter.
- Bake the Cake:
- Pour the batter into the prepared pan and smooth the top.
- Bake for 25-30 minutes or until a toothpick inserted in the center comes out clean.
- Cool and Slice:
- Let the cake cool in the pan for 10 minutes, then transfer it to a wire rack to cool completely.
- Slice as needed for layering or serve as is.
