“Fluffy Homemade Sponge Cake Recipe

Ingredients:

  • 4 large eggs (room temperature)
  • 1 cup (200g) granulated sugar
  • 1 cup (120g) all-purpose flour
  • 1/2 tsp baking powder
  • 1/4 cup (60ml) milk (optional, for extra moisture)
  • 1 tsp vanilla extract (optional)

Instructions:

  1. Prepare the Oven and Pan:
    • Preheat your oven to 350°F (175°C).
    • Grease an 8-inch (20cm) round cake pan and line the bottom with parchment paper.
  2. Whisk the Eggs:
    • In a large bowl, beat the eggs with an electric mixer on high speed for about 5 minutes until thick, pale, and frothy.
  3. Add Sugar Gradually:
    • Slowly add the sugar while continuing to beat. Mix until fully dissolved and the mixture becomes fluffy.
  4. Sift the Dry Ingredients:
    • In a separate bowl, sift together the flour and baking powder. Gently fold this mixture into the egg-sugar batter using a spatula. Be careful not to deflate the batter.
  5. Add Milk and Vanilla (Optional):
    • If desired, warm the milk slightly and mix it with vanilla extract. Gently fold this into the batter.
  6. Bake the Cake:
    • Pour the batter into the prepared pan and smooth the top.
    • Bake for 25-30 minutes or until a toothpick inserted in the center comes out clean.
  7. Cool and Slice:
    • Let the cake cool in the pan for 10 minutes, then transfer it to a wire rack to cool completely.
    • Slice as needed for layering or serve as is.
