Fluffy Pancakes

 

 

 

Ingredients:

  • 1 1/2 cups all-purpose flour
  • 3 1/2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1 tablespoon granulated sugar
  • 1 1/4 cups milk
  • 1 egg
  • 3 tablespoons melted butter (plus extra for greasing the pan)
  • 1 teaspoon vanilla extract (optional)
  • Maple syrup and butter (for serving)

Instructions:

  1. Prepare the batter:
    • In a large mixing bowl, sift together the flour, baking powder, salt, and sugar.
    • In another bowl, whisk together the milk, egg, melted butter, and vanilla extract (if using).
    • Gradually pour the wet ingredients into the dry ingredients, whisking gently until combined. Do not overmix; it’s okay if the batter is slightly lumpy.
  2. Heat the pan:
    • Heat a non-stick skillet or griddle over medium heat and lightly grease it with butter or cooking spray.
  3. Cook the pancakes:
    • Pour 1/4 cup of batter onto the skillet for each pancake.
    • Cook until bubbles form on the surface and the edges look set, about 2-3 minutes.
    • Flip the pancake and cook for another 2-3 minutes, or until golden brown.
    • Repeat with the remaining batter, greasing the skillet as needed.
  4. Serve:
    • Stack the pancakes on a plate and top with butter and a generous drizzle of maple syrup.
    • Optionally, add fresh fruits like strawberries or blueberries for extra flavor.
