Fresh Cucumber, Tomato, and Bell Pepper Salad

 

 

 

Ingredients:

  • 2 medium cucumbers, sliced
  • 2-3 medium tomatoes, cut into wedges or slices
  • 1 yellow bell pepper, diced or sliced
  • 1 orange bell pepper, diced or sliced
  • 1/2 medium red onion, thinly sliced
  • A handful of fresh parsley, chopped (for garnish)

For the Dressing:

  • 3 tbsp olive oil
  • 2 tbsp lemon juice or vinegar (white wine or apple cider)
  • 1/2 tsp salt (or to taste)
  • 1/4 tsp black pepper (freshly ground)
  • 1/4 tsp garlic powder (optional)
  • 1/2 tsp sugar or honey (optional, for balance)

Instructions:

  1. Prepare the Vegetables:
    • Wash and dry all the vegetables.
    • Slice the cucumbers and tomatoes. Dice or slice the bell peppers and thinly slice the red onion.
    • Place the prepared vegetables in a large salad bowl.
  2. Make the Dressing:
    • In a small bowl, whisk together olive oil, lemon juice (or vinegar), salt, pepper, garlic powder, and sugar or honey (if using). Adjust seasoning to taste.
  3. Combine and Toss:
    • Pour the dressing over the vegetables.
    • Gently toss to combine, ensuring the vegetables are evenly coated with the dressing.
  4. Garnish and Serve:
    • Sprinkle chopped fresh parsley over the salad for a fresh, herby flavor.
    • Serve immediately or chill for 15-20 minutes for the flavors to meld.

  • Sprinkle with toasted nuts or seeds for extra texture.
