Fresh Cucumber, Tomato, and Bell Pepper Salad
Ingredients:
- 2 medium cucumbers, sliced
- 2-3 medium tomatoes, cut into wedges or slices
- 1 yellow bell pepper, diced or sliced
- 1 orange bell pepper, diced or sliced
- 1/2 medium red onion, thinly sliced
- A handful of fresh parsley, chopped (for garnish)
For the Dressing:
- 3 tbsp olive oil
- 2 tbsp lemon juice or vinegar (white wine or apple cider)
- 1/2 tsp salt (or to taste)
- 1/4 tsp black pepper (freshly ground)

Instructions:
- Prepare the Vegetables:
- Wash and dry all the vegetables.
- Slice the cucumbers and tomatoes. Dice or slice the bell peppers and thinly slice the red onion.
- Place the prepared vegetables in a large salad bowl.
