Fried Chicken Caesar
Ingredients:
4 boneless, skinless chicken breasts
1½ cups grated fresh Parmesan cheese
½ teaspoon fresh black pepper
1 cup Caesar salad dressing
½ cup oil (optional)
Preparation:
Prepare the oven and pan:
Preheat your oven to 190°C.
Coat an 8 x 11½-inch pan with nonstick cooking spray.
Prepare the chicken:
If chicken breasts are uneven in thickness, place them in a ziplock bag and pound with a mallet to 1 inch thick. This also makes cooking possible.
Sprinkle both sides of each breast with 1 cup Parmesan cheese and freshly ground black pepper. Prepare the chicken in the prepared dish.
Prepare Caesar dressing:
In a small bowl, whisk Caesar salad dressing and cream until well combined. You can omit the oil if you prefer a lighter version.
Pour Caesar mixture evenly over chicken fillets in baking dish.
Sprinkle ½ cup Parmesan cheese on top.
Bake the chicken: Bake
in the preheated oven for 30 minutes or until the chicken is almost cooked and the internal temperature reaches 65°C as measured at the thickest part with a meat thermometer.
To complete cooking:
Preheat the oven to broil and cook the chicken for another 2-4 minutes or until the top is golden brown and crispy. Be very careful to avoid burns.
Make sure the internal temperature of the thickest part of the chicken reaches 74°C.
Let rest before serving:
Remove chicken from oven and cover tightly with aluminum foil. Let it rest for 5-10 minutes. This resting period allows the juices to distribute throughout the meat, making it more tender and flavorful.
Garnish and serve:
If desired, use chopped parsley before serving.
