Ingredients:

  • For the Cake Base:
    • 2 cups all-purpose flour
    • 1 cup granulated sugar
    • 1 tsp baking powder
    • 1/2 tsp baking soda
    • 1/2 tsp salt
    • 2 large eggs
    • 1 cup plain yogurt or sour cream
    • 1/2 cup vegetable oil
    • 1 tsp vanilla extract
  • For the Topping:
    • 3–4 fresh apricots or peaches (sliced)
    • 1 tbsp powdered sugar (for dusting)

Instructions:

  1. Preheat the Oven: Preheat your oven to 350°F (175°C). Grease and line an 8- or 9-inch round cake pan.
  2. Prepare the Batter:
    • In a bowl, mix together the flour, sugar, baking powder, baking soda, and salt.
    • In a separate bowl, whisk the eggs, yogurt, vegetable oil, and vanilla extract until smooth.
    • Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Do not overmix.
  3. Assemble the Cake:
    • Pour the batter into the prepared cake pan and spread evenly.
    • Arrange the apricot or peach slices on top of the batter in a decorative pattern.
  4. Bake:
    • Bake in the preheated oven for 35–40 minutes, or until a toothpick inserted into the center comes out clean.
    • Remove the cake from the oven and let it cool for 10–15 minutes before transferring to a wire rack.
  5. Dust with Sugar:
    • Once the cake has cooled slightly, sprinkle powdered sugar on top for decoration.
  6. Serve: Slice and serve with a cup of tea or coffee.
