Fruit-Filled Loaf Cake with Glaze
Ingredients:
For the Cake:
- 1 1/2 cups all-purpose flour
- 1 1/2 teaspoons baking powder
- 1/2 teaspoon salt
- 1/2 cup unsalted butter, room temperature
- 1 cup granulated sugar
- 2 large eggs
- 1 teaspoon vanilla extract

Instructions:
- Prepare the Fruit Filling:
- In a small saucepan, combine the diced peaches, sugar, cornstarch, and lemon juice.
- Cook over medium heat, stirring frequently, until the mixture thickens and the fruit is soft, about 5-7 minutes. Remove from heat and let it cool.
- Prepare the Cake:
- Preheat your oven to 350°F (175°C). Grease and flour a 9×5-inch loaf pan.

- Let the cake cool in the pan for 10 minutes, then remove from the pan and let it cool completely on a wire rack.
- Prepare the Glaze:
- In a small bowl, whisk together the powdered sugar, milk, and vanilla extract until smooth.
