Fruit-Filled Loaf Cake with Glaze

 

Ingredients:

For the Cake:

  • 1 1/2 cups all-purpose flour
  • 1 1/2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter, room temperature
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup milk

For the Fruit Filling:

  • 1 1/2 cups diced fresh peaches (or any preferred fruit)
  • 1/4 cup granulated sugar
  • 1 tablespoon cornstarch
  • 1 tablespoon lemon juice

For the Glaze:

  • 1 cup powdered sugar
  • 2-3 tablespoons milk
  • 1/2 teaspoon vanilla extract

Instructions:

  1. Prepare the Fruit Filling:
    • In a small saucepan, combine the diced peaches, sugar, cornstarch, and lemon juice.
    • Cook over medium heat, stirring frequently, until the mixture thickens and the fruit is soft, about 5-7 minutes. Remove from heat and let it cool.
  2. Prepare the Cake:
    • Preheat your oven to 350°F (175°C). Grease and flour a 9×5-inch loaf pan.
    • In a medium bowl, whisk together the flour, baking powder, and salt.
    • In a large mixing bowl, cream together the butter and sugar until light and fluffy.
    • Add the eggs one at a time, beating well after each addition. Stir in the vanilla extract.
    • Gradually add the dry ingredients to the butter mixture, alternating with the milk, beginning and ending with the dry ingredients. Mix until just combined.
  3. Assemble the Cake:
    • Pour half of the batter into the prepared loaf pan and spread it evenly.
    • Spoon the cooled fruit filling over the batter, spreading it evenly but keeping it away from the edges.
    • Pour the remaining batter over the fruit filling and spread it evenly to cover.
  4. Bake the Cake:
    • Bake in the preheated oven for 50-60 minutes, or until a toothpick inserted into the center comes out clean.
    • Let the cake cool in the pan for 10 minutes, then remove from the pan and let it cool completely on a wire rack.
  5. Prepare the Glaze:
    • In a small bowl, whisk together the powdered sugar, milk, and vanilla extract until smooth.
    • Once the cake is completely cool, drizzle the glaze over the top.
  6. Serve:
