Garlic and Red Onion Confit
Ingredients:
- 2 large red onions, thinly sliced
- 1 whole head of garlic, cloves peeled and left whole
- 1 cup olive oil or a mix of olive and vegetable oil
- 2 tablespoons balsamic vinegar
- 1 teaspoon sugar (optional)
- Salt and black pepper to taste
- A few sprigs of fresh thyme or rosemary (optional)
Instructions:
- Prepare the Ingredients:
- Thinly slice the red onions. If the garlic cloves are very large, you can slice them in half, otherwise, leave them whole.
- Cook the Onion and Garlic:
- In a medium-sized saucepan, combine the onions, whole garlic cloves, and olive oil. The oil should just cover the onions and garlic.
- Set the pan over low heat and let the mixture simmer very gently. Stir occasionally to ensure the onions and garlic do not stick to the bottom of the pan.

- Continue to cook on low heat for about 30 minutes to 1 hour, or until the onions and garlic are very soft and caramelized.
- Finish the Confit:
- Once everything is beautifully caramelized and tender, check for seasoning and adjust if necessary.
- Remove from heat and let cool slightly. If desired, you can remove the herb sprigs before storing.
- Store or Serve:
- Transfer the confit to a clean jar and cover with oil, making sure the onions and garlic are submerged. Store in the refrigerator.
- Serve at room temperature as a condiment with cheese, spread on toast, or as a topping for meats or vegetables.
