Garlic and Red Onion Confit

Ingredients:

  • 2 large red onions, thinly sliced
  • 1 whole head of garlic, cloves peeled and left whole
  • 1 cup olive oil or a mix of olive and vegetable oil
  • 2 tablespoons balsamic vinegar
  • 1 teaspoon sugar (optional)
  • Salt and black pepper to taste
  • A few sprigs of fresh thyme or rosemary (optional)

Instructions:

  1. Prepare the Ingredients:
    • Thinly slice the red onions. If the garlic cloves are very large, you can slice them in half, otherwise, leave them whole.
  2. Cook the Onion and Garlic:
    • In a medium-sized saucepan, combine the onions, whole garlic cloves, and olive oil. The oil should just cover the onions and garlic.
    • Set the pan over low heat and let the mixture simmer very gently. Stir occasionally to ensure the onions and garlic do not stick to the bottom of the pan.
  3. Add Flavorings:
    • Once the onions have started to soften and become translucent, stir in the balsamic vinegar and sugar if using. Season with salt and black pepper. Add the herbs if you’re using them.
    • Continue to cook on low heat for about 30 minutes to 1 hour, or until the onions and garlic are very soft and caramelized.
  4. Finish the Confit:
    • Once everything is beautifully caramelized and tender, check for seasoning and adjust if necessary.
    • Remove from heat and let cool slightly. If desired, you can remove the herb sprigs before storing.
  5. Store or Serve:
    • Transfer the confit to a clean jar and cover with oil, making sure the onions and garlic are submerged. Store in the refrigerator.
