Golden Brown Potato Pancakes

4 large potatoes, grated 🥔
1 small onion, grated 🧅
2 eggs, beaten 🥚
¼ cup all-purpose flour
½ tsp salt 🧂

½ tsp black pepper
½ tsp garlic powder 🧄
½ tsp paprika
2 tbsp fresh parsley, chopped 🌿
½ cup vegetable oil (for frying)

Grate the potatoes and onion, then place them in a clean kitchen towel. Squeeze out as much excess liquid as possible.
Transfer to a bowl and add the beaten eggs, flour, salt, black pepper, garlic powder, paprika, and chopped parsley. Mix well.
Heat vegetable oil in a pan over medium heat.
Scoop a small portion of the potato mixture and flatten it into a pancake shape.
Place it in the hot oil and fry for about 3-4 minutes per side until golden brown and crispy.

Remove and place on a paper towel to drain excess oil.
Serve warm with sour cream or applesauce on the side.
