Golden Brown Potato Pancakes

 

Ingredients

  • 4 large potatoes, grated 🥔

  • 1 small onion, grated 🧅

  • 2 eggs, beaten 🥚

  • ¼ cup all-purpose flour

  • ½ tsp salt 🧂

  • ½ tsp garlic powder 🧄

  • ½ tsp paprika

  • 2 tbsp fresh parsley, chopped 🌿

  • ½ cup vegetable oil (for frying)

Instructions

Prepare the Potato Mixture:

  1. Grate the potatoes and onion, then place them in a clean kitchen towel. Squeeze out as much excess liquid as possible.

  2. Transfer to a bowl and add the beaten eggs, flour, salt, black pepper, garlic powder, paprika, and chopped parsley. Mix well.

Cook the Pancakes:

  1. Heat vegetable oil in a pan over medium heat.

  2. Scoop a small portion of the potato mixture and flatten it into a pancake shape.

  3. Place it in the hot oil and fry for about 3-4 minutes per side until golden brown and crispy.

  4. Remove and place on a paper towel to drain excess oil.

Serve & Enjoy:

  1. Serve warm with sour cream or applesauce on the side.
