Grilled Brisket Sandwich with Cheese and Caramelized Onions
Ingredients:
- 2 slices of thick-cut bread (e.g., sourdough or brioche)
- 4-6 slices of smoked brisket
- 2 slices of cheese (Provolone, Swiss, or Cheddar work well)
- 1 medium onion, thinly sliced
- 2 tbsp butter (for cooking)
- 1 tbsp olive oil
- 1-2 tbsp barbecue sauce (optional)
- Butter or mayonnaise (to spread on the bread for grilling)

- Caramelize the Onions:
- Heat 1 tablespoon of butter and the olive oil in a skillet over medium heat.
- Add the sliced onions and a pinch of salt.
- Cook the onions slowly, stirring occasionally, for 20-25 minutes until they are golden and caramelized. Set aside.
- Heat the Brisket:
- Warm the brisket slices in the same skillet or in the microwave until heated through.
- Assemble the Sandwich:
- Spread a thin layer of barbecue sauce on one side of each bread slice (if using).
- Place a slice of cheese on one slice of bread, then layer with brisket slices, caramelized onions, and the second slice of cheese. Top with the other slice of bread.
- Grill the Sandwich:
- Spread butter or mayonnaise on the outside of each bread slice.
- Heat a skillet or griddle over medium heat. Place the sandwich in the skillet and press down gently with a spatula.
- Cook for 3-4 minutes on each side, or until the bread is golden and the cheese is melted.
- Serve:
- Slice the sandwich in half and serve immediately with your favorite side (e.g., coleslaw, fries, or pickles).
