Grilled salmon sticks with lemon pepper and aged blue cheese You have to try this!
Ingredients:
For the salmon sticks:
450 g whole salmon, skin removed
1 cup all-purpose flour
2 tablespoons lemon zest
1 teaspoon salt
2 eggs, beaten
Vegetable oil for cooking
For the Aged Blue Cheese Sauce:
1/2 cup crumbled blue cheese
1/2 cup mayonnaise
1 teaspoon lemon juice
1/2 teaspoon Old Gulf seasoning
1/4 teaspoon black pepper
Preparation:
Sliced salmon fillet long, thin fish -similar to sticks.
Mix the flour, lemon zest and salt in a shallow bowl.
Dip each piece of salmon into the beaten egg and make sure it is well coated.
Roll the egg-coated salmon in the flour mixture and press gently to firm up. Repeat with the remaining salmon.
Heat the vegetable oil in a deep skillet or frying pan over medium heat. The oil should be about 5cm thick.
Carefully add the salmon fillets to the hot oil in batches to avoid overflowing the pan. Fry for about 3-4 minutes or until golden and lightly browned. Remove the stick halfway through cooking to check.
After cooking, place the fried salmon sticks on paper towels to drain off excess oil. For the
Old Gulf Cheese Dressing, combine crumbled blue cheese, mayonnaise, lemon juice, Old Gulf seasoning, and black pepper in a small bowl. Mix well until smooth and creamy.
Serve lemon grilled pepperoni salmon hot sticks with a side of Old Bay blue cheese for dipping.
