Healthy Carrot and Oat Cake Recipe
Ingredients:
- 1 cup rolled oats
- 1 large carrot, finely grated
- 1 large egg
- 1/2 cup milk (dairy or non-dairy)
- 1/4 cup honey or maple syrup
- 1 teaspoon vanilla extract
- 1 teaspoon baking powder
- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon ground nutmeg
- 1/4 teaspoon salt
- 1/4 cup chopped walnuts (optional, for topping)
Instructions:
- Preheat Oven:
- Preheat your oven to 350°F (175°C). Grease and line an 8-inch round cake pan with parchment paper.
- Prepare the Batter:
- In a large bowl, combine the rolled oats, grated carrot, egg, milk, honey or maple syrup, and vanilla extract. Mix well.
- Add the baking powder, ground cinnamon, ground nutmeg, and salt. Stir until all ingredients are fully incorporated.
- Bake the Cake:
- Pour the batter into the prepared cake pan and spread it evenly.
- Sprinkle the chopped walnuts on top if using.
- Bake in the preheated oven for 25-30 minutes, or until a toothpick inserted into the center of the cake comes out clean.
- Cool and Serve:
- Allow the cake to cool in the pan for about 10 minutes, then transfer it to a wire rack to cool completely.
- Slice and serve.
