Healthy Carrot and Oat Cake Recipe

 

Ingredients:

  • 1 cup rolled oats
  • 1 large carrot, finely grated
  • 1 large egg
  • 1/2 cup milk (dairy or non-dairy)
  • 1/4 cup honey or maple syrup
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking powder
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1/4 teaspoon salt
  • 1/4 cup chopped walnuts (optional, for topping)

Instructions:

  1. Preheat Oven:
    • Preheat your oven to 350°F (175°C). Grease and line an 8-inch round cake pan with parchment paper.
  2. Prepare the Batter:
    • In a large bowl, combine the rolled oats, grated carrot, egg, milk, honey or maple syrup, and vanilla extract. Mix well.
    • Add the baking powder, ground cinnamon, ground nutmeg, and salt. Stir until all ingredients are fully incorporated.
  3. Bake the Cake:
    • Pour the batter into the prepared cake pan and spread it evenly.
    • Sprinkle the chopped walnuts on top if using.
    • Bake in the preheated oven for 25-30 minutes, or until a toothpick inserted into the center of the cake comes out clean.
  4. Cool and Serve:
    • Allow the cake to cool in the pan for about 10 minutes, then transfer it to a wire rack to cool completely.
    • Slice and serve.
