Hearty Beef and Barley Soup
Ingredients:
- 500 grams of beef chuck, cut into 1-inch cubes
- 1 cup of pearl barley
- 3 carrots, peeled and sliced
- 1 large onion, diced
- 3 cloves of garlic, minced
- 1 liter of beef broth
- 2 cups of water
- 1 teaspoon of dried thyme
- 1 teaspoon of dried rosemary
- Salt and pepper to taste
- 2 tablespoons of olive oil
- Fresh parsley, chopped for garnish
Instructions:
- Heat olive oil in a large pot over medium-high heat. Add the beef cubes and sear until browned on all sides. Remove the beef and set aside.
- In the same pot, add the onions and garlic, cooking until they are soft and translucent.
- Return the beef to the pot and add carrots, barley, beef broth, water, thyme, and rosemary. Bring to a boil.
- Reduce the heat to a simmer and cover the pot. Cook for about 1 hour or until the barley and beef are tender.
- Season with salt and pepper to taste.
- Serve hot, garnished with chopped parsley.
