Hearty Beef and Barley Soup

 

 

 

Ingredients:

  • 500 grams of beef chuck, cut into 1-inch cubes
  • 1 cup of pearl barley
  • 3 carrots, peeled and sliced
  • 1 large onion, diced
  • 3 cloves of garlic, minced
  • 1 liter of beef broth
  • 2 cups of water
  • 1 teaspoon of dried thyme
  • 1 teaspoon of dried rosemary
  • Salt and pepper to taste
  • 2 tablespoons of olive oil
  • Fresh parsley, chopped for garnish

Instructions:

  1. Heat olive oil in a large pot over medium-high heat. Add the beef cubes and sear until browned on all sides. Remove the beef and set aside.
  2. In the same pot, add the onions and garlic, cooking until they are soft and translucent.
  3. Return the beef to the pot and add carrots, barley, beef broth, water, thyme, and rosemary. Bring to a boil.
  4. Reduce the heat to a simmer and cover the pot. Cook for about 1 hour or until the barley and beef are tender.
  5. Season with salt and pepper to taste.
  6. Serve hot, garnished with chopped parsley.
