Ingredients:

  • 500g ground beef
  • 1 head of cabbage, chopped
  • 2 large carrots, peeled and diced
  • 1 large onion, chopped
  • 2 cloves garlic, minced
  • 1 liter beef broth
  • 800g canned diced tomatoes
  • 2 tablespoons tomato paste
  • 1 teaspoon dried thyme
  • 1 teaspoon dried oregano
  • Salt and pepper, to taste
  • Fresh parsley, chopped (for garnish)

  1. Cook the Ground Beef:
    • In a large pot over medium heat, brown the ground beef until fully cooked, breaking it up as it cooks. Drain excess fat.
  2. Sauté Vegetables:
    • Add the chopped onions, garlic, and carrots to the pot with the ground beef. Cook until the vegetables are softened, about 5 minutes.
  3. Add Liquids and Seasonings:
    • Stir in the beef broth, diced tomatoes, and tomato paste. Season with thyme, oregano, salt, and pepper. Bring to a simmer.
  4. Add the Cabbage:
    • Mix in the chopped cabbage, ensuring it’s submerged in the liquid. Cover and let simmer for about 20 minutes, or until the cabbage is tender.
  5. Final Adjustments:
    • Taste and adjust seasoning if necessary. Let the soup simmer uncovered for a few more minutes to thicken slightly if desired.
  6. Serve:
    • Ladle the soup into bowls and garnish with fresh chopped parsley.
