Hearty Meat and Vegetable Soup

 

 

Ingredients:

  • 500g ground beef or pork
  • 2 large potatoes, peeled and cubed
  • 2 carrots, diced
  • 1 bell pepper, diced
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 can (400g) diced tomatoes
  • 4 cups beef or vegetable broth
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • Salt and pepper to taste
  • 2 tablespoons olive oil

Instructions:

  1. Prepare the Ingredients:
    • Heat olive oil in a large pot over medium heat.
    • Add the onion and garlic, sauté until translucent.
    • Increase the heat to medium-high and add the ground meat, cooking until browned and crumbly.
  2. Cook the Vegetables:
    • Stir in the carrots and bell pepper, cooking for about 5 minutes until slightly softened.
    • Add the potatoes and canned tomatoes, mixing well.
  3. Simmer the Soup:
    • Pour in the broth and bring the mixture to a boil.
    • Reduce heat to a simmer and add thyme and rosemary.
    • Season with salt and pepper.
    • Cover and let simmer for about 20-25 minutes, or until the potatoes are tender.
  4. Final Adjustments:
    • Taste and adjust seasoning if necessary.
    • If the soup is too thick, add more broth to reach your desired consistency.
  5. Serve:
    • Ladle the hot soup into bowls.
    • Serve warm with a side of crusty bread or a light salad for a complete meal.
