Hearty Multi-Seed Bread
Ingredients:
- Dry Ingredients:
- 2 cups whole wheat flour
- 1 cup all-purpose flour
- 1/4 cup sunflower seeds
- 1/4 cup pumpkin seeds
- 1/4 cup flaxseeds
- 1/4 cup sesame seeds
- 2 tablespoons chia seeds
- 1 teaspoon salt
- 2 teaspoons baking powder
- Wet Ingredients:
- 1 3/4 cups milk (or non-dairy alternative)
- 1/4 cup olive oil
- 1/4 cup honey or maple syrup
- 2 large eggs
- For Topping:
- A mixture of sunflower seeds, pumpkin seeds, and oats
Instructions:
- Preheat Oven and Prepare Pan:
- Preheat your oven to 375°F (190°C).
- Line a loaf pan with parchment paper or lightly grease it.
- Mix Dry Ingredients:
- In a large bowl, combine whole wheat flour, all-purpose flour, sunflower seeds, pumpkin seeds, flaxseeds, sesame seeds, chia seeds, salt, and baking powder.
- Combine Wet Ingredients:
- In another bowl, whisk together milk, olive oil, honey, and eggs until thoroughly blended.
- Combine Wet and Dry Ingredients:
- Add the wet ingredients to the dry ingredients, mixing just until combined. The batter will be thick but should be pourable.
- Pour into Pan and Add Toppings:
- Pour the batter into the prepared loaf pan. Smooth the top with a spatula.
- Sprinkle the top generously with a mix of sunflower seeds, pumpkin seeds, and oats for a crunchy topping.
- Bake:
- Place in the oven and bake for 45-50 minutes, or until a toothpick inserted in the center comes out clean.
- Cool and Serve:
- Let the bread cool in the pan for about 10 minutes before transferring it to a wire rack to cool completely.
- Slice and enjoy as is, or toast and serve with butter or a spread of your choice.
