Hearty Multi-Seed Bread

Ingredients:

  • Dry Ingredients:
    • 2 cups whole wheat flour
    • 1 cup all-purpose flour
    • 1/4 cup sunflower seeds
    • 1/4 cup pumpkin seeds
    • 1/4 cup flaxseeds
    • 1/4 cup sesame seeds
    • 2 tablespoons chia seeds
    • 1 teaspoon salt
    • 2 teaspoons baking powder
  • Wet Ingredients:
    • 1 3/4 cups milk (or non-dairy alternative)
    • 1/4 cup olive oil
    • 1/4 cup honey or maple syrup
    • 2 large eggs
  • For Topping:
    • A mixture of sunflower seeds, pumpkin seeds, and oats

Instructions:

  1. Preheat Oven and Prepare Pan:
    • Preheat your oven to 375°F (190°C).
    • Line a loaf pan with parchment paper or lightly grease it.
  2. Mix Dry Ingredients:
    • In a large bowl, combine whole wheat flour, all-purpose flour, sunflower seeds, pumpkin seeds, flaxseeds, sesame seeds, chia seeds, salt, and baking powder.
  3. Combine Wet Ingredients:
    • In another bowl, whisk together milk, olive oil, honey, and eggs until thoroughly blended.
  4. Combine Wet and Dry Ingredients:
    • Add the wet ingredients to the dry ingredients, mixing just until combined. The batter will be thick but should be pourable.
  5. Pour into Pan and Add Toppings:
    • Pour the batter into the prepared loaf pan. Smooth the top with a spatula.
    • Sprinkle the top generously with a mix of sunflower seeds, pumpkin seeds, and oats for a crunchy topping.
  6. Bake:
    • Place in the oven and bake for 45-50 minutes, or until a toothpick inserted in the center comes out clean.
  7. Cool and Serve:
    • Let the bread cool in the pan for about 10 minutes before transferring it to a wire rack to cool completely.
    • Slice and enjoy as is, or toast and serve with butter or a spread of your choice.
