Hearty White Bean and Sausage Soup

Ingredients:

  • 1 tablespoon olive oil
  • 1 large onion, chopped
  • 2 garlic cloves, minced
  • 2 carrots, diced
  • 1 celery stalk, diced
  • 1 teaspoon dried thyme
  • 1/2 teaspoon dried rosemary
  • 4 cups chicken or vegetable broth
  • 2 cans (15 oz each) white beans, drained and rinsed
  • 1 pound smoked sausage, sliced
  • Salt and pepper, to taste
  • Fresh parsley, chopped for garnish

Instructions:

  1. Heat the Olive Oil:
    • In a large pot, heat the olive oil over medium heat. Add the chopped onion and cook until translucent, about 5 minutes.
  2. Sauté the Vegetables:
    • Add the garlic, carrots, and celery to the pot. Cook for about 3 minutes, or until the vegetables start to soften.
  3. Season:
    • Stir in the thyme and rosemary, cooking for another minute to release the flavors.
  4. Add Broth and Beans:
    • Pour in the broth and bring the mixture to a boil. Once boiling, reduce the heat to low and add the white beans. Let simmer for about 20 minutes.
  5. Cook the Sausage:
    • In a separate skillet, cook the sliced sausage until browned. Once cooked, add the sausage to the soup.
  6. Simmer:
    • Continue to simmer the soup for an additional 10 minutes to blend the flavors. Season with salt and pepper to taste.
  7. Serve:
    • Ladle the soup into bowls and garnish with chopped parsley. Serve hot for a nourishing and filling meal.

This soup pairs wonderfully with crusty bread or a light salad for a complete meal that’s sure to warm you up from the inside out!
