Herb-Roasted Baby Potatoes Recipe

 

Ingredients:

  • 2 pounds baby potatoes, halved
  • 3 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1 tablespoon fresh rosemary, chopped (or 1 teaspoon dried rosemary)
  • 1 tablespoon fresh thyme, chopped (or 1 teaspoon dried thyme)
  • Salt and pepper to taste
  • Optional: fresh parsley, chopped for garnish

Instructions:

  1. Preheat the Oven:
    • Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper or lightly grease it.
  2. Prepare the Potatoes:
    • In a large bowl, combine the halved baby potatoes, olive oil, minced garlic, chopped rosemary, chopped thyme, salt, and pepper. Toss everything together until the potatoes are evenly coated with the oil and herbs.
  3. Roast the Potatoes:
    • Spread the potatoes out in a single layer on the prepared baking sheet.
    • Roast in the preheated oven for 25-30 minutes, or until the potatoes are golden brown and tender. Stir the potatoes halfway through the cooking time to ensure even roasting.
  4. Serve:
    • Remove the potatoes from the oven and transfer them to a serving dish.
    • Garnish with fresh chopped parsley if desired.
    • Serve immediately and enjoy!
