Ingredients:

  • 500g minced beef or lamb
  • 4 large eggs
  • 1 onion, finely chopped
  • 2 cloves garlic, minced
  • 1 tablespoon olive oil
  • 1 teaspoon paprika
  • 1 teaspoon ground cumin
  • Salt and pepper, to taste
  • Fresh parsley or cilantro for garnish

Instructions:

  1. Prepare the ingredients:
  2. Start by chopping the onion and mincing the garlic. Set them aside for later use.
  3. Cook the minced meat:
  4. Heat olive oil in a large skillet over medium heat. Add the minced meat and cook, stirring frequently, until browned and cooked through. Season with salt, pepper, paprika, and ground cumin to add flavor.
  5. Sauté the onions and garlic:
  6. In the same skillet, push the cooked minced meat to one side. Add a little more oil if needed and sauté the chopped onion and minced garlic until softened and fragrant, about 3-5 minutes.

  8. Stir the onions and garlic into the minced meat, mixing thoroughly.
  9. Add the eggs:
  10. Create four small wells in the center of the mixture. Crack an egg into each well. Cover the skillet and let the eggs cook for 3-5 minutes, or until the egg whites are set but the yolks are still runny. If you prefer your eggs well-done, cook for a bit longer.
  11. Garnish and serve:
  12. Once the eggs are cooked to your liking, remove the skillet from heat and sprinkle fresh parsley or cilantro over the top for a fresh, vibrant touch.
