Garlic Butter Seared Scallops
Ingredients:
- 12 large sea scallops
 - 2 tbsp olive oil
 - 3 tbsp unsalted butter
 - 3 garlic cloves, minced
 - Juice of 1 lemon
 - 1/4 cup chicken or seafood stock (optional)
 - Salt and pepper to taste
 - 1 tbsp chopped parsley (for garnish)
 
Instructions:
- Prepare the Scallops:
- Pat the scallops dry with a paper towel (this ensures a nice sear).
 - Season both sides with salt and pepper.
 
 - Sear the Scallops:
- Heat olive oil in a large skillet over medium-high heat.
 - Once the oil is hot, carefully place the scallops in the pan, leaving space between them.
 - Sear for 2–3 minutes on each side until a golden crust forms. Remove scallops and set aside.
 
 - Make the Garlic Butter Sauce:
- Reduce the heat to medium and add butter to the same pan.
 - Stir in the minced garlic and sauté until fragrant (about 1 minute).
 - Optional: Add chicken or seafood stock and simmer for 1–2 minutes to reduce slightly.
 - Squeeze in lemon juice and stir.
 
 - Combine:
- Return the scallops to the pan and spoon the garlic butter sauce over them.
 - Cook for 1–2 minutes to heat through, ensuring not to overcook the scallops.
 
 - Serve:
- Garnish with chopped parsley and serve immediately.
 - Pair with a side of rice, pasta, or steamed vegetables.
