Ingredients:

  • 1 tablespoon olive oil
  • 1 medium onion, diced
  • 2-3 carrots, diced
  • 2 celery stalks, diced
  • 3 garlic cloves, minced
  • 8 cups chicken broth
  • 2 cups cooked chicken (shredded or diced)
  • 1 teaspoon dried thyme
  • 1 teaspoon dried parsley
  • 1 bay leaf
  • Salt and pepper to taste
  • 3 cups egg noodles (or any noodles of choice)
  • Optional: Fresh parsley for garnish

Instructions:

  1. Sauté the vegetables:
    • Heat the olive oil in a large pot over medium heat.
    • Add the onion, carrots, and celery. Sauté until the vegetables are soft (about 5 minutes).
    • Stir in the garlic and cook for another 1 minute.
  2. Add the broth and seasonings:
    • Pour in the chicken broth.
    • Add thyme, parsley, bay leaf, salt, and pepper.
    • Bring to a gentle boil.
  3. Cook the noodles:
    • Stir in the noodles and cook until tender (about 8-10 minutes, or as per package instructions).
  4. Add the chicken:
    • Add the cooked chicken to the pot.
    • Simmer for another 5 minutes to let the flavors meld.
  5. Taste and adjust seasoning:
    • Adjust the salt and pepper as needed.
  6. Serve:
    • Ladle the soup into bowls.
    • Garnish with fresh parsley if desired and serve hot.
