Homemade Crispy Potato Chips
Ingredients:
- 2 large potatoes (Russet or Yukon Gold work well)
- Cold water (for soaking)
- Vegetable oil (for frying)
- Salt (to taste)
- Optional: pepper, paprika, garlic powder, or any other seasoning of your choice
Instructions:
- Prepare the Potatoes:
- Wash and peel the potatoes. Using a mandoline slicer or a sharp knife, slice the potatoes as thinly as possible (about 1/8 inch or thinner).
- Soak the Potato Slices:
- Place the potato slices in a large bowl of cold water. Soak for at least 30 minutes to remove excess starch, which helps in achieving a crispier texture.
- Dry the Potato Slices:
- Drain the potatoes and pat them dry with a clean kitchen towel or paper towels. Make sure they are thoroughly dry to avoid splattering when frying.
- Heat the Oil:
- In a deep-fryer or a large, heavy-bottomed pot, heat vegetable oil to 350°F (175°C). Use enough oil to submerge the potato slices completely.
- Fry the Potato Slices:
- Working in small batches, fry the potato slices in the hot oil. Fry for about 2-3 minutes, or until golden brown and crispy. Stir occasionally to ensure even cooking.
- Using a slotted spoon or a frying basket, remove the chips from the oil and place them on a paper towel-lined baking sheet to drain excess oil.
- Season the Chips:
- Immediately season the hot chips with salt and any other desired seasonings while they are still hot and oily, which helps the seasoning stick better.
- Cool and Serve:
