Homemade Noodle Soup Recipe
Ingredients:
- 1 medium onion, finely chopped
- 1 large carrot, grated or finely chopped
- 1 medium potato, diced
- 2 cloves garlic, minced
- 1 cup vermicelli or thin noodles
- 2 tbsp olive oil or butter
- 1 tsp paprika
- 1/2 tsp turmeric
- 1/2 tsp black pepper
- Salt to taste
- 4 cups chicken or vegetable broth
- 2 tbsp fresh parsley, chopped
Instructions:
- Prepare the Base:
Heat olive oil or butter in a large pot over medium heat. Add the onion and garlic, sauté until fragrant and translucent. - Add Vegetables:
Stir in the carrot and potato, cooking for 3-4 minutes. Sprinkle in the paprika, turmeric, black pepper, and salt. - Pour in the Broth:
Add the chicken or vegetable broth and bring the mixture to a boil. Lower the heat and simmer for about 10 minutes, until the potatoes are tender. - Cook the Noodles:
Add the vermicelli or thin noodles to the soup and cook for another 5 minutes, or until the noodles are soft. - Add Fresh Herbs:
Stir in the chopped parsley for a fresh flavor boost. Adjust seasoning if needed. - Serve:
Ladle the soup into bowls and enjoy it warm. Serve with a squeeze of lemon if desired for added brightness.
