Homemade Noodle Soup Recipe

 

 

 

Ingredients:

  • 1 medium onion, finely chopped
  • 1 large carrot, grated or finely chopped
  • 1 medium potato, diced
  • 2 cloves garlic, minced
  • 1 cup vermicelli or thin noodles
  • 2 tbsp olive oil or butter
  • 1 tsp paprika
  • 1/2 tsp turmeric
  • 1/2 tsp black pepper
  • Salt to taste
  • 4 cups chicken or vegetable broth
  • 2 tbsp fresh parsley, chopped

Instructions:

  1. Prepare the Base:
    Heat olive oil or butter in a large pot over medium heat. Add the onion and garlic, sauté until fragrant and translucent.
  2. Add Vegetables:
    Stir in the carrot and potato, cooking for 3-4 minutes. Sprinkle in the paprika, turmeric, black pepper, and salt.
  3. Pour in the Broth:
    Add the chicken or vegetable broth and bring the mixture to a boil. Lower the heat and simmer for about 10 minutes, until the potatoes are tender.
  4. Cook the Noodles:
    Add the vermicelli or thin noodles to the soup and cook for another 5 minutes, or until the noodles are soft.
  5. Add Fresh Herbs:
    Stir in the chopped parsley for a fresh flavor boost. Adjust seasoning if needed.
  6. Serve:
    Ladle the soup into bowls and enjoy it warm. Serve with a squeeze of lemon if desired for added brightness.
