Ingredients:

  • 1 liter whole milk
  • 2-3 tablespoons lemon juice or white vinegar
  • Optional: herbs or spices for flavor (like thyme, oregano)

Instructions:

  1. Heat the Milk:
    • Pour the milk into a large pot and heat it over medium heat. Bring it to a boil, stirring occasionally.
  2. Curdle the Milk:
    • Once boiling, add the lemon juice or vinegar gradually while stirring.
    • You’ll see the milk begin to separate into curds and whey.
  3. Strain the Curds:
    • Turn off the heat and let it sit for a minute.
    • Line a strainer with cheesecloth or a clean towel and pour the curdled milk into it. Drain off the whey.
  4. Shape the Cheese:
    • Bring the corners of the cheesecloth together and twist to remove excess liquid.
    • Place the cheese under a heavy object to flatten and set it. Leave it for 30 minutes.
  5. Cut and Serve:
    • Once firm, cut the cheese into cubes. Sprinkle herbs or spices if desired.
